Almost nobody submits a formula containing something obviously non-Halal. The ingredients that hold up certification are the functional ones behind the headline — the additives bought as blends, where the blend carries whatever its own components carry.
These are the ten we see most often, ordered by how frequently they come up.
1. Mono- and diglycerides (emulsifier, E471)
The most common single cause of a Halal hold-up in powder products. E471 can be derived from plant oils or from animal fat, and the ingredient name is identical either way.
What to do. Require a source declaration plus a valid Halal certificate for the emulsifier itself. A plant-derived version exists for practically every application; it is simply not always the default your supplier quotes.
2. Flavours carried in ethanol
Liquid flavours are frequently carried in ethanol. The finished powder may contain almost none of it, but the ingredient entering the plant does, and certification looks at what enters.
What to do. Ask the flavour house for the Halal-certified version of the same flavour. Most maintain both. The certified version sometimes has a slightly different profile, so it should be assessed at bench-sample stage rather than substituted late.
3. Gelatine
Bovine gelatine requires Halal slaughter certification through the whole chain. Porcine gelatine is excluded outright and cannot be certified under any circumstances.
What to do. Fish gelatine or plant hydrocolloids such as pectin or agar. Both change the texture, so this is a reformulation rather than a swap.
4. Whey and dairy derivatives
The problem sits upstream. Whey is a by-product of cheese making, and if animal rennet was used in that process, the whey carries that status even though it is many steps removed from your product.
What to do. Ask for Halal certification covering the whey itself, not a certificate for the finished blend it arrives in. Microbial rennet alternatives are widely available.
5. L-cysteine
Used as a dough conditioner and in some amino acid blends. Historically produced from animal hair or feathers, which makes the source declaration essential.
What to do. Synthetic or fermentation-derived L-cysteine, with documentation.
6. Enzymes and their growth media
Enzymes are usually microbial and unproblematic in themselves, but the growth media and downstream processing aids used to produce them need their own assessment.
What to do. Request the full Halal documentation for the enzyme preparation, not just a statement that the enzyme is microbial.
7. Glycerine (glycerol)
Another dual-source ingredient. Glycerine can be petroleum-derived, plant-derived or animal-fat-derived, and again the name does not distinguish them.
What to do. Specify plant-derived and require the certificate. It appears more often than expected — as a carrier, a humectant and inside flavour and colour preparations.
8. Magnesium stearate and stearic acid
Common flow agents and lubricants. Stearic acid is a fatty acid that may be plant or animal derived.
What to do. Plant-derived grades are standard from most suppliers, but they must be specified rather than assumed.
9. Natural colours with animal or insect origin
Carmine (cochineal, E120) is insect-derived and is not accepted. Some other colour preparations use gelatine or animal-derived carriers even when the pigment itself is plant based.
What to do. Beetroot, paprika, turmeric, anthocyanins or approved synthetic colours, each with its own certificate covering the carrier as well as the pigment.
10. Vitamin preparations and premixes
Vitamins A, D and E are fat-soluble and are commonly supplied on a carrier, gelatine-coated or stabilised with an animal-derived component. Vitamin D3 in particular is frequently lanolin-derived.
What to do. Ask specifically about the carrier and the coating, not only about the vitamin. Halal-certified premixes exist and should be specified from the start — a premix is the single hardest thing to substitute late, because it affects the whole nutritional declaration.
Why does documentation take longer than people expect?
Because a valid Halal certificate is required for every raw material, from the supplier, and an assurance in an email is not a certificate. Where a supplier does not have one, the ingredient has to be replaced and the formula re-sampled.
This is why substituting an ingredient late in a project takes longer than the substitution itself suggests. The formula changes, the sample is remade, and the documentation has to catch up.
How to avoid all ten
- Declare the Halal requirement in the brief, not after the first sample.
- Ask for Halal-certified grades from the start — most of these ingredients have one, and specifying it costs nothing at the briefing stage.
- Watch the blends. Premixes, flavour systems and creamers each contain several of the ingredients above.
- Keep the documentation. The certificate has to be current at the time of audit, not at the time of purchase.
