Beetroot moved from a vegetable to a functional ingredient because of its naturally occurring dietary nitrate, and it stayed because it is one of the few functional powders that looks as striking as it claims to be.

Both of those assets — the nitrate and the colour — are more fragile than brand owners expect.

Juice powder or whole root powder?

Beetroot juice powder is the juice, concentrated and dried, and carries a higher nitrate concentration by weight. Whole root powder is the milled vegetable, including the fibre, and is cheaper and less concentrated. They are not interchangeable in a nitrate-led product.

If a nitrate dose matters to the proposition, specify juice powder with an assayed nitrate content per lot. A supplier who cannot report it is selling you colour.

Why does the colour fade?

Beetroot's colour comes from betalain pigments, and betalains are degraded by heat, light, oxygen and moisture. A vivid magenta powder can drift towards brown across shelf life — and consumers read that as a spoiled product even when it is safe.

Colour stability is therefore a packaging and process question:

  • Drying method matters. Gentle drying preserves both pigment and nitrate; aggressive heat costs you both at once.
  • Light barrier is not optional. A clear jar of beetroot powder on a lit retail shelf is a demonstration of pigment degradation.
  • Moisture accelerates it, which puts the usual weight on barrier packaging and filling humidity — see Shelf Life of Instant Powder Products.
  • Test colour at end of shelf life, not at production. That is the sample that tells you whether the product survives its own claim.

What about the taste?

Earthy and distinctly sweet — beetroot has a high natural sugar content, which is useful because it means less added sweetener, and awkward because the earthy note is polarising.

What works: citrus, berry, apple, ginger and pomegranate. What does not: dairy and creamy bases, which amplify the earthiness rather than cutting it.

A practical note that saves a round of samples — the earthy character is concentration-dependent. A blend where beetroot provides colour and a supporting note is far easier to sell than one where it dominates, unless your consumer specifically wants a beetroot product.

What claims can a beetroot product make?

Nitrate-related performance and circulation claims are the reason the category exists, and they are also the area where permitted wording is narrowest. Settle the claim and the market before formulation. As with any functional ingredient, what you may say depends on the destination and on how the product is regulated there.

What should a beetroot brief contain?

  • Juice powder or whole root, and the nitrate content required
  • Whether a nitrate-based claim is intended, and in which market
  • Colour target, and whether it must hold to end of shelf life
  • Packaging — light barrier is effectively mandatory
  • The flavour direction, and whether beetroot leads or supports
  • Whether a Halal logo is required
  • Organic requirement, if any, which is a separate chain of custody
