Where does black sesame come from?

Sesame is a plant of the genus Sesamum, with most wild relatives in Africa and a smaller number in India. It is grown worldwide for its seeds: world production reached 6.7 million tonnes in 2024, with India, Myanmar and Sudan the largest producers.

Sesame is one of the oldest oilseed crops, and that word - oilseed - is the key to everything about it as an ingredient. The seed is grown for oil first, and roughly half its weight is fat. Black sesame is the unhulled seed, which is where both the colour and much of the roasted depth come from.

In Chinese and Southeast Asian cooking black sesame is a dessert flavour as much as a seasoning: the hot sweet soup, the filling in glutinous rice balls, the paste. It carries a nutty, faintly bitter richness that works in a way few other dark flavours do.

Commercially it has moved into protein powders, meal replacements and milk-tea ranges, because it reads as both indulgent and traditional - a combination most flavours have to choose between.

What does black sesame taste like?

Deeply nutty and roasted, with a faint bitterness from the hull and a richness that comes from oil rather than sugar. Darker and more savoury than peanut, and it reads as substantial even without sweetening.

CharacterLevelWhy
SweetnessLowSesame is not sweet; any sweetness in a product is added around it.
BitternessMediumThe unhulled black seed carries a genuine faint bitterness - part of the character.
RoastHighRoasting is what develops sesame's flavour; unroasted it is flat and oily.
CreaminessHighAbout half the seed is oil, which reads directly as richness in the mouth.
AromaHighRoasted sesame aroma is strong and distinctive, and survives processing well.

Indicative flavour positioning to help write a product brief. It is not sensory panel data, and the finished taste is set with you at sampling stage.

What has to be decided to make black sesame as a powder?

How to get a free-flowing powder out of an oilseed. Sesame is roughly half fat, so milling it finely produces paste rather than powder, and that single physical fact drives the whole specification.

  • Grinding an oilseed does not give you a powder. Press it hard enough for a fine particle and the oil releases and it becomes tahini. Getting a dry, free-flowing sesame powder means working with defatted material, a carrier, or a spray-dried preparation rather than simply milling seed.
  • The oil that is left will oxidise. Whatever fat stays in the product goes rancid rather than stale, and rancid sesame is unmistakable. The fat level, any antioxidant system and the barrier film are decided together.
  • Roast level is the flavour dial, and it is easy to overshoot. Under-roasted sesame is flat; over-roasted turns acrid and the bitterness stops being pleasant. It is a narrow band and it is set at sampling.
  • Sesame is a declarable allergen in most markets. That affects labelling, export documentation and line handling, and it belongs at briefing rather than at artwork.

What are the Halal risk points in a black sesame powder?

The carrier and the emulsifier rather than the seed. Sesame is plant material. But a sesame powder almost always involves a drying carrier or an emulsifier to manage the oil, and that is where undocumented material enters.

Mono- and diglycerides (E471) are the usual choice for handling fat in a powder, and the ingredient name is identical whether the source is plant oil or animal fat. Where the product is a protein powder, the protein base needs its own check: whey carries the status of the rennet used upstream, so a certificate covering the whey itself is required.

D&O manufactures under JAKIM Halal certification to MS 1500, and every raw material on a Halal-certified line carries its own valid certificate. The recurring failure points are listed in Top 10 Ingredients That Fail Halal Certification.

Which pack formats suit black sesame powder?

Sachet, stick pack, jar or bulk. The format is chosen with the formula rather than after it, because it decides how the powder is protected from moisture and how the buyer meets the product.

FormatWhat it suits
SachetSingle-serve drink or dessert. The sealed pack is the best protection for residual oil.
Stick packConvenience ranges and dessert bundles.
JarCommon for meal replacement and dessert mixes bought in volume, though the oil is more exposed once opened.
BulkBakery, dessert and beverage shop supply.

Frequently asked questions

Why can't sesame simply be ground into a powder?
Because roughly half the seed is oil. Mill it finely and the oil releases and the result is paste, not powder. A dry, free-flowing sesame powder means using defatted material, a carrier or a spray-dried preparation rather than milling the seed alone.
What does rancid sesame taste like?
Sharp, stale and slightly paint-like - quite different from a product that has simply lost freshness. Because sesame carries so much oil, oxidation is the limiting factor on its shelf life, which is why the fat level and the pack barrier are decided together.
Is black sesame different from white sesame?
Black sesame is the unhulled seed. The hull carries the colour and a faint bitterness, and the flavour is deeper and more savoury. White sesame is hulled, milder and sweeter. They are not interchangeable in a product built on the darker character.
Is sesame an allergen?
Yes, and it is declarable in most markets including the United States and the European Union. That affects the label, the export documentation and how the line is handled, so it is settled at briefing rather than discovered during artwork.
Who is responsible for the label and artwork?
The brand owner owns the artwork and the claims on it. D&O supplies the product data the label must carry, such as ingredient declaration and nutritional information, and will flag where a claim would change the product's regulatory classification. Final approval of the printed label stays with the brand.
How is shelf life decided?
By stability testing on your actual formula in your actual pack, not by a number quoted upfront. The powder, the barrier film and the destination climate all move it. Moisture is what usually ends a powder's life, which is why pack format is specified alongside the formula rather than after it.
Can products made here be exported to the United States?
Yes. A facility shipping food into the US must hold an FDA food facility registration under FSMA, which D&O does. Registration is a filing requirement, not an FDA approval or endorsement. Labelling and claims still have to meet US rules for your specific product.
What is the difference between OEM, ODM, private label and white label?
OEM manufactures to your specification. ODM means the manufacturer develops the formula and you brand it. Private label puts your brand on an existing formula. White label is the same base product sold to several brands. D&O works OEM and ODM, so the formula can start from your brief or from our library.
