OEM Asam Boi Powder Manufacturer in Malaysia

Also known as Sour plum

OEM & private label asam boi powder - salted sour plum drink and snack seasoning, Halal manufactured in sachet, stick pack or bulk for your brand.

What is asam boi?

Preserved sour plum - fruit cured with salt and sugar until it is simultaneously sour, salty and sweet. The drink made from it belongs to a long Chinese tradition of sour plum beverages, and in Malaysia it appears in drinks, snacks and as a seasoning over fresh fruit.

The closest documented relative is suanmeitang, the Chinese sour plum drink made from smoked plums and brown sugar, which is described as slightly salty as well as sweet and sour. That three-way balance is the whole character, and it is what makes asam boi unusual among fruit flavours.

Malaysian usage goes further than the drink. Asam boi is sprinkled over cut fruit, stirred into calamansi juice, and used as a snack seasoning - so a brand briefing asam boi might be asking for a beverage, a topping or a coating, and those are different products.

It is also one of the few genuinely savoury-adjacent flavours in a sweet category, which gives it a distinctiveness that mainstream fruit flavours cannot match.

What does asam boi taste like?

Sharply sour and openly salty at the same time, with sweetness arriving last to hold the two together. Mouth-watering rather than refreshing, and far more assertive than its fruit origins suggest.

SweetnessBitternessRoastCreaminessAroma
CharacterLevelWhy
SweetnessMediumPresent and necessary, but it serves the sour and salt rather than leading.
BitternessLowNot a bitter flavour - the sharpness is acid and salt, not tannin.
RoastLowNo roasting; curing and drying rather than heat development.
CreaminessLowNever paired with dairy - acid and salt do not sit well with milk here.
AromaMediumDistinctive preserved-fruit aroma, more pungent than fresh plum but not overpowering.

Indicative flavour positioning to help write a product brief. It is not sensory panel data, and the finished taste is set with you at sampling stage.

What has to be decided to make asam boi as a powder?

The salt, which is the part most formulators under-estimate. Asam boi is a drink flavour that is genuinely salty, and salt in a powder changes moisture behaviour, nutritional labelling and how much sourness the palate will accept.

  • Salt is structural, not seasoning. Take it out and the product is simply a sour plum drink, which is a different and much less interesting thing. Leave it in and it has to be declared, because sodium appears on the nutrition panel and some markets scrutinise it.
  • Salt and acid together both draw moisture. Each is hygroscopic on its own; together they make caking and pack corrosion more likely than in an ordinary fruit powder, which puts the barrier film and any flow agent in the brief.
  • Decide the application before the formula. A drink, a fruit topping and a snack coating need different particle sizes, different dissolving behaviour and different intensities. Asam boi is used as all three, so the question has to be asked.
  • Sourness has a ceiling that varies by market. Malaysian buyers accept a sharpness that export audiences often find aggressive. The acid level is a positioning decision rather than a technical constant.

What are the Halal risk points in an asam boi powder?

Few on the fruit side - plum, salt and sugar are straightforward. The checks are the drying carrier, any flow agent in a salt-and-acid powder, and whether a flavour system is used to boost the preserved character.

Anti-caking and flow agents matter more on this product than most, because a salty, acidic powder needs them. Magnesium stearate and stearic acid are fatty acids that can be plant or animal derived under the same ingredient name, and that distinction does not appear in the name itself.

D&O manufactures under JAKIM Halal certification to MS 1500, and every raw material on a Halal-certified line carries its own valid certificate. The recurring failure points are in Top 10 Ingredients That Fail Halal Certification.

Which pack formats suit asam boi powder?

Sachet, stick pack, jar or bulk. The format is chosen with the formula rather than after it, because it decides how the powder is protected from moisture and how the buyer meets the product.

FormatWhat it suits
SachetSingle-serve drink. A sealed pack is the best defence for a powder that draws moisture from two directions.
Stick packConvenience and snack-adjacent ranges, including sprinkle-over-fruit use.
JarWorks for the seasoning application, where the powder is used a little at a time over weeks.
BulkSnack coating, beverage shop and food service use.

Frequently asked questions

Why is asam boi salty?
Because the plum is cured with salt as well as sugar. The salt is part of the preservation and part of the flavour - take it out and the result is an ordinary sour plum drink. It is what makes asam boi mouth-watering rather than merely sour.
Does the salt have to appear on the label?
Yes. Sodium appears on the nutrition panel and some markets look at it closely, so a genuinely salty drink flavour is a labelling decision as well as a taste one. It is settled at briefing rather than discovered during artwork.
Why does asam boi powder cake more than other fruit powders?
Because salt and acid are both hygroscopic, and this product has both. Together they draw moisture faster than a sugar-and-fruit powder does, which makes the barrier film and the flow agent part of the formula rather than packaging details.
Is asam boi a drink flavour or a seasoning?
Both, which is why the application has to be named at briefing. Drinks, fruit toppings and snack coatings need different particle sizes, dissolving behaviour and intensities. The same powder will not do all three well.
Who is responsible for the label and artwork?
The brand owner owns the artwork and the claims on it. D&O supplies the product data the label must carry, such as ingredient declaration and nutritional information, and will flag where a claim would change the product's regulatory classification. Final approval of the printed label stays with the brand.
Which pack format should I choose?
Sachets and stick packs suit single servings, trial sizes and e-commerce, because the dose is fixed and the barrier protects the powder. Jars suit repeat home use. Bulk suits a brand doing its own filling. Hygroscopic flavours, which draw moisture from the air, are better in a sealed sachet than in a jar that is opened daily.
Will my product be classified as a food or as a health supplement?
The claim decides it, not the format. A powder sold as a drink is a food under the Food Act 1983. The moment it carries a health claim or a therapeutic dose it falls to the National Pharmaceutical Regulatory Agency, which requires product registration before sale. Settle this before artwork, because it changes the label.
Can D&O develop a flavour that is not in the library?
Yes. The library is what has been produced before, not a menu limit. Bring a reference product, a target taste or a competitor sample and the R&D lab benchmarks against it. Flavour development is part of the OEM brief rather than a separate service.
